Have you considered buying half a cow out right. We are lucky as the rancher we buy from lets us put money each month till the cow is ready. I have been doing this since pandemic began and boy was i grateful .
Also, if you look around your neighborhood, there might be an elderly couple that are no longer able to garden anymore. I could possibly make up some kind of arrangement to grow some of your food on their land and that way they also get a part of it you can can or ferment veggies so you have stuff for winter.
